Métode Gravetat

The Métode Gravetat (gravity method) is based on a simple principle: an invisible force attracts an object with mass toward another. What does this mean in our winery? It means that throughout the entire winemaking process, we avoid using pumps to move the grapes and wine, preserving their integrity and quality.

Once the grapes arrive at the winery, they are carefully hand-selected before being pressed or placed in large containers for further transport. A crane, specially designed for our needs, lifts the containers and transports them via ceiling rails to the stainless steel tanks, where the fermentation process begins.

Producing exceptional wines, in our opinion, requires an exceptional approach to treating the raw material: our grapes. For this reason, and after extensive research, we decided to adopt the gravity method in our winery.

Our starting point was the belief that grapes should be handled as gently as possible during the winemaking process to prevent premature oxidation. This oxidation accelerates maceration and impacts the final quality of the wine.

Our philosophy has always been to work in harmony with nature, allowing us to create aromatic wines that retain all the natural health benefits of the final product.

Facility Overview

The winery spans a total area of 7,300 m², distributed across four levels. This spacious design allows for the efficient handling of various winemaking processes. The facility includes approximately 190 barrels, with capacities ranging from 225 liters to 500 liters, as well as large vats (foudres) that can hold up to 6,000 liters.
